My grandmother taught us no more than a minute in boiling water, then ice bath, and then spread them all out on teatowels or cheesecloth to dry before freezing them. I think the idea of the ice bath is to stop them from cooking further. We had a bean slicer (metal), which was great fun, however, I did slice off the tip of my brother’s finger; we didn’t find it until the cheesecloth stage. Ah, childhood.
I can my beans. I wash, cut then put into glass mason jars with a bit of salt and cover with boiling water. I process them in a pressure canner. They are so delicious.
I don’t know anyone that grows runner beans in the U.S., we grow string beans. Many different types, and most have no strings either, but after we remove the top and bottom like you, we either leave them whole, or cut them in half. Some do cut them up but no one I know does that. So nice to see how others do this. I hope to try runner beans next year, and I already ordered them. Thank you for the video, and the information on runner beans. I think we are going to like them.
why don`t you cool the beens down by giving them into cold water, at least. Icy water is even better. That`s the way the frozen food companys do it.
Posted before seeing the mill. OEPS :p
Not the Alderman peas. They lost some of their sweetness after being frozen. I have blanched them 5 minutes, maybe that’s a bit to long.
Maybe I should write in the correct comment box
We have mills to cut runner beans. I can’t find any english name so if you google ‘snijbonenmolen’ (dutch) you can see how it looks. So handy
I just use scissors to prep my French beans. I don’t really grown runners any more.
Oh and use a french peeler to take off the strings, so much easier than a sharp knife as you either keep the strings or end up cutting off half the bean.
I think we are coming at this from the same place, just I know about cooking and know very little about growing. Have you tried what I suggested above? Did it make any difference. I totally agree with you seasonal is best, but there is an alternative to soggy veg from the freezer if you know what to do.
Hi sean there is a lot that I need to learn about growing vegetables but there is a lot I know about cooking vegetables. For beans, water really hot (bubbling cauldron), no more than a minute. You are trying to kill bacteria not turn them into mush. Next don’t leave them to cool, they will carry on cooking, put them in ice water immediately, as that will keep the texture, then label as you say and put them in the deep freeze. Great vid, but please don’t overcook them!
I’ve just added a link in the description above. Thanks.
I don’t care what anyone says…Frozen Beans are always watery and limp no matter how you prepare or store them.
Enjoy the glut of fresh ones but for me, eating soggy frozen beans, no thanks.
Eat fresh seasonally..apart from peas which are fantastic frozen.
Sean, love that windmill device ! May i ask where you got it ? If online perhaps you could put a link up ? Cheers.
